Katherine Louise Springfield Knox, a lifelong resident of West Monroe was born January 20, 1927. She passed away peacefully surrounded by her loving family on Monday, July, 6, 2015. Katherine was a humble, Christian lady who always put her family and others before herself. 'Mimis' joy in life was preparing her delicious meals, especially her famous hamburger soup and homemade 'fried' pancakes. She dearly loved playing Skip-bo, even teaching her great-grandchildren to play. 'Mimi' set the standard high when it came to loving and caring for family. Heavens Gate was crowded with her loved ones, lead by her beloved son, welcoming her Home. Services for Katherine Knox will be held Wednesday, July 8, 2015 at 11:30 A.M. in the chapel of Mulhearn Funeral Home, West Monroe with grandsons, Bro.Todd Gregory officiating and Jonathan Gregory playing the violin. Interment will be at Mulhearn Memorial Park Cemetery, Monroe LA. The family will receive friends from 9:30 A.M. until the time of serviceMrs. Knox was preceded in death by her husband of 59 years, Norman H. Knox Jr.; Mother, Aline Burks; step-father, Harvey Burks; father, Walter Springfield; and her beloved son, Norman H. “Buster” Knox III; siblings, Adell Clark, W.H. Springfield, Marie Brady, and Jimmy Burks; Sisters-in-law, Winnie Terry Nelda Boultinghouse and Norma Jean Beatty; and dear friend Geneva Telford.She is survived by her daughters Patsy Knox Gregory and husband, Johnny of West Monroe and Kathy Knox of Baton Rouge; grandchildren, Todd Gregory (Donna), Brad Gregory (Amy), Alicia Street (Lee), Sara K. Leech (Dan), Rachel K. Lucas (Dean), Amy B. Kennedy (Rick) and Mathew W. Boyles (Sarah); thirteen great grandchildren and numerous nieces and nephews.Pallbearers are grandsons, Todd Gregory, Brad Gregory, Jonathan Gregory, Lee Street, Rick Kennedy, Matthew Boyles, and Tyler Baugh.
